Just wondering....Whats your favorite veggie cook book?

Wow... thats hard. I have so many!
I guess the one I use the most is called Dakshin, by Chandra Padmanabhan. It contains vegetarian cuisine of South India. I recipes are excellent, and the photos are spectacular. I bought it nearly 10 years ago, and haven't seen it anywhere since. Lucky for me I grabbed it! I typically use it 3-4 times per week, since my husband still cooks for himself and I often help him by making the spice blends.
Another one I like is World of the East Vegetarian Cooking by Madhur Jaffrey, which I also purchased a long time ago. The Moosewood cookbook is also pretty good. I also like to get recipes on-line at epicurious.com and other sites like that.
I have probably 100+ cookbooks, but most of them I dont really even use. I often peruse them to get ideas and inspiration but mostly create my own thing, often by combining the best parts of several recipes.

I don't have a favorite cook book - there are just too many....but this is one of my favorite soups:
LENTIL/RICE/BARLEY SOUP
Serving Size : 6
1 c Lentils
1 c Rice
2/3 c Barley
1 Onion, chopped
1 Bay Leaf
2 cn Corn
1 1/2 ts Sweet Basil
1 1/2 cn Evaporated Milk
Salt to taste
Wash and sort lentils, rice, barley. Simmer lentils, rice and barley in 6 cups water with salt, onion, bay leaf and sweet basil until tender. Add corn and milk. Add additional salt to taste. Warm to desired eating temperature. I add garlic salt - - and I think it's just great and easy.
