I have a friend coming to visit around Thanksgiving who is a vegetarian. I'm looking for a mexican style entree to make one of the evenings while she is visiting. I'd like to find something that doesn't require alot of cheese - so the recipe isn't SO high in fat and calories so I can eat it too!. She'll eat dairy, eggs, and sometimes fish. Any suggestions?

Hi there...
Well, my suggestion is super easy...there are wonderful frozen vegetarian entrees that you could prepare and then fix up to be special. Cedar lane makes enchiladas (140 cals each and very tasty). You could add chopped tomatoes, onions and salsa and serve it on a nice platter along with a salad and that would be quite tasty and well within JC. Also, Amy's does a tasty chili/rice and cornbread dinner that is great.

If you want to go more towards traditional, you can get tofurky and fix trimmings.

How about pasta ole you know like what Jenny makes. I made it with some Orzo pasta cut up some red and green peppers, corn, a can of black beans and garlic. I used some vegtable stock for moisture so I did have to add any fat or cheese. You could add some salsa, tomatoes and parmesan cheese or serve some shredded cheese on the side. I kind of tried to copy Jenny's meal because it was my favorite.
Another idea is tacos or soft tacos or even taco salad and used vegitarian refried beans and all the other fixins. You could even do nachos and don't for get lowfat cheese. Good luck

You know, most people have a misconception when it comes to Mexican food, that it's really cheesy and full of fat. It's actually not true, there are tons of recipies that are veggy friendly and don't require a lot of time and effort.

P.S. Look in the Burrito's section, there are some black bean recipies that are really simple and tastey.

Is your friend lacto/ovo? I just looked at that veg Mex site posted above and they have a lowfat Chili Relleno and a sweet corn tamale(yum!)recipe. That is just my veggie .02
