Hello, friends!
I was just wondering if anyone has a low fat entree idea for Thanksgiving. I have a lot of Veg Times back issues, and I think I can adapt something, but most of them involve some sort of pastry, which is hard to do correctly low fat. I'm also thinking individual servings, since that's easier portion wise. We usually make a faux "turkey" from seitan.
How are other veggie folks dealing? I would love to see your ideas!

Deedee, the current (Dec) Vegetarian Times has some good ideas for Thksg. I just started subscribing a couple months ago. I usually eat "around the turkey". Have you tried tofurkey? Bread & Circus has it but I never tried it. And I wouldn't want to be bothered making itjust for me. Anyway was wondering how it is?

I haven't tried the Tofurkey. Last year we had a Now and Zen UnTurkey. Those are really good. They are seitan formed around stuffing and covered with a "skin" of yuba (a derivative of soymilk) and come with gravy. These are probably also available at your local natural foods store, and are available for 4 or 8 people in the frozen section (you might have to order them ahead). Unfortunately, my husband considers this "cheating" cooking wise . I am working on him, though. We do have a mix to prepare our own seitan. I might do individual "breasts" stuffed with mushrooms, herbs, and maybe wild rice. I'll let you know how it goes. It's only the two of us this year, so if he doesn't like it, he can eat peanut butter and jelly just like the pilgrims !
