Looking for sandwich suggetions from my vegetarian support group.

Have you checked out the veggie sandwich "meats" in your grocery store? For some reason, where I live they put them in the produce section by the salad mixes . Lightline and Yves Veggie Cuisine are good straight ahead protein choices, and very lowfat. Depending on how good your local grocery store is, they might also have veggie "egg" salad. Most stores carry Athenos Travelers- a hummus and pita combo that is serving size. "Egg" salad and Travelers would use up a fat, though, so you might not want to go there. You might also find a product called "The Good Lunch," which is sort of a Lunchables for vegetarians, and also covers your snack. Do you live near a Trader Joe's? It is certainly a traveller's friend!

P.S. I wouldn't do the frozen entrees in the cooler for more than a few hours. Are you staying at a hotel? They might have a mini fridge they could put in your room (it might cost extra), but if you crank one of those puppies to max and fill it pretty full, it would make an adequate freezer. No, I will not have access to a fridge. I might go with thremos/soup idea.
But I never heard of some of the things that you mentioned. Veggie lunch meat? I guess I lead a sheltered life. LOL I love Publix egg salad. I just do not know how much fat is in it. It doesn't say. Not sure if it loaded with a lot of sodium.
I also have never heard of The Good Lunch," which is sort of a Lunchables for vegetarians? What section of the store whould I look for this item? Also, I have never heard of Trader Joe's? Is that a restaurant? Where do you live? I live in the Central Florida area. The easier it is for me to prepare my lunches, the better it will be. I want to avoid cheese, because it always makes me bloated with water.

Maybe I should check out the Health Food stores in my area. Haven't done that in a while.

Dear Connie-
Trader Joe's is a (sort of) supermarket. It's tough to explain, but they have a LOT of great food at very reasonable prices. There might be one near either home or your vacation destination; call 1-800-SHOP-TJS. I don't know why the supermarkets isolate the faux sandwich meats. I think it's poor planning, or maybe a rule imposed by the meat industry. I'm sure your local health food store has at least some of the items I mentioned, though. Good luck!

I make taco pitas lots at at time individually wrap and freeze them. I put them in the fridge the night before I take it to work. Then at lunch time it's almost room temperature (sometimes a little cold).
Mix TVP* with water and Mexican spices.
Chop green peppers, red peppers, tomatoes, and carrots (that's my quirk).
Spread the spiced TVP mixture into a pita and toss in the veggies.
You can add in cheese if you want to.
*TVP is textured vegetable protein. It's available at most grocery stores. Look by the specialty flours. I use this in lots of dishes that need bulk like lasagna or tacos. When you hydrate it, it will take on the flavor of the spices you use.
