Look! A new veggie item coming our way! Yippie!
This was written by the JC Food Specialist, in the Food Feed Back Forum. Under the topic: "Miss The Mexican Style Casserole"
Fall Fest 2002 is just around the corner with several new choices, including a new lunch item, which I think you will enjoy!
This year we are offering Cheesy Enchilada with Spanish Rice as our Fall Fest lunch entree. It is a hand-rolled, vegetarian enchilada filled with cheese, black beans, and tofu, covered in a traditional enchilada sauce and served with a side of Spanish rice.
Fall Fest 2002 will launch in September of this year.
Looks like we will have something to look forward to in several weeks!

Whoo-hoo, I can't wait! You all might think I'm nutso, but I really miss tofu. It needs to be in the right form, though, and these enchiladas sound like just the ticket. And spanish rice??!!! Hold me back! I could have that seven nights a week.

I need more very choices now!!! I wish the fall menu was already available!!! LOL--Connie--my new counselor was trying to tell me that Chili con carne was veggie--and I was like, oh nooo its not, we already went through all of this on the message board. ANyway, I hope they do the rice bowl thing too.

Does tofu have a "taste"?
I love anything with rice, but the entrees offered to us now just aren't doing it for me.

I look forward to trying anything new; I'm dying for the "Mocha Java Cheesecake" to come my way!
Tofu, similar to couscous ...takes on the flavor of the things around it. For example, tofu is often used for the consistency of it - for example, Cooking Thin (www.foodtv.com) has a smoothie that uses tofu. Hope that helps!

Thanks for the exciting news!! I am looking forward to another veggie choice on the menu. This morning my consultant and I were just discussing how they have a chili for lunch and dinner... but it would be nice if at least one of them was meatless! I am going to be out of town for a conference for the next week and I am not going to be able to take any frozen dinners. It comes down to the only Jenny cuisine option of Pasta Fagioli for dinner 5 nights in a row! I think that I will choose to dine out for some variety!
But thank for the good news that "our" menu options will be expanding a little in the fall!

Yeah, it would be nice to offer a meatless chile. However, one is beef and the other is turkey...I hope they'll just add a meatless one and not replace one.

The cheese enchiladas sound good, though I am a little scared about the tofu. I have only been on the program about a month and if I don't get some more choices I am going to go crazy. Hopefully there will be several new foods for the fall fest. No offense to the vegetarians but I hope there are more meaty choices.
