What, if any, what changes would you like to make on the Vegetarian Menu if you could?
I know some Vegetarians do not eat eggs, but I wouldn't mind having the option of the Pancake mix or the Sunshine Sandwich w/o the meat. Maybe with low fat/low cal. cheese instead.
Maybe there are those of you who just love these items, but I would really love to see these items replaced: Garden Vegetable Soup, Italian Style Tomato Soup, Pasta Fagioli and the Trail Mix. "OR" at least have a second Veggie Menu to choose from without these items on them.
The Cheese Curls could be a touch softer. They are pretty hard. Although I would rather have something sweet like the cakes instead of something not sweet like the Cheese Curls, I would love to see JC come out with their own version of a bag of potato chips. Winn Dixie came out with these no salt Potato Chips, zero cholesterol and low in everything else. I just had a taste to see how they were and they are delicious. I do not recommend anyone buying them, I would just like to see JC come out with something like it. Would also love to see JC come out with their own Ice Cream dessert too.
Put on your thinking caps and share with us, what you would change on the JC Veggie Menu, if anything, or how would you improve it, or what would you like to see on week 2 of the JC Veggie Menu?

You always have the good questions, Connie! I don't have much argument with the snacks, and I could happily eat Triple Grain Crisps every morning. Entrees are where our choices get pretty desperate, though I agree with you about the pasta fagioli. Although it is something I should like, I like the idea and most of the components, just thinking about it makes me want to heave! Some things I would like to see:
* a mini quiche or frittata
* an Asian stir fry with tofu or seitan
* a vegetarian chili
* tofu "egg" salad
* lentil or split pea soup (no ham!)
* pesto pasta
* mexican entree
* veggie "meat" loaf
* veggie tuna &/or chicken salad
These are all products or recipes I've seen, most that I've made, and most of them can be done with very little fat. We just need the ever-brilliant Jenny's help in controlling our portions and packaging for freezer or shelf stability. By the way, where are our veggie fajitas???!!!????

Tofu egg salad sounds great! I never thought of that! Vegetarian Meat loaf is a must!
But what is pesto pasta? When I make Chili with meat for my Husband, I use the Ground Beef (chopped up), V8 Tomatoe Juice and the Large Goya Red Kidney Beans and it is delicious. Now if they could make something like that, making it a Veggie Chili, that would be scrumptious!
Wouldn't it be just fabulous if JC took all of our Veggie suggestions and surprised us with an additional Veggie Menu? That would be so very great!

It is so great to hear other JC vegetarians speak about the food. I feel so limited right now. If I eat another Garden Veggie Soup or Pasta Fagoli I will get sick. I think that the limited amount of vegetarian selections make it the most difficult for me to stick to the program. If there was more variety like those that you guys mentioned, I think it would be easier. I find myself sticking to the ones I like best and it gets boring and I'm worried that I will end up getting sick of those too. I think Spaghetti Marinara would be good and some soy dogs and even soy chicken patties would be a good change.

Pesto pasta is just pasta with pesto used as a sauce. Pesto: A sauce consisting of usually fresh basil, garlic, pine nuts, olive oil, and grated cheese. Hope that helps!

Whoops! Yeah, I forgot to mention what pesto is. It's quite often very fatty, with lots of olive oil, pine nuts and parmesan. I have a low fat recipe from that veggie goddess, Mollie Katzen, for a practically fat free one made with spinach and basil. Mmmmm! My husband and I also make chili, but we use Yves veggie cuisine Veggie ground round. You can find the recipe at Yves veggie cuisine. I have found that meat eaters really like it! It is pretty low fat, makes a lot, and is great for potlucks.

Less dependance upon cheese in the meals! I would like to have something without cheese,it is something I choose to avoid.

Dear Poppy: I never thought that I would ever want to become a Vegan. I love my cheese and my eggs. Right now I have like a 100 plus pounds to lose and I am doing it the JC vegetarian way. I do not have self control (yet)when left on my own, so I find that sticking to the program, works best for me right now. But when I am able to, I want to work at not having cheese and eggs too.

Hello. I am only in week 4, which may explain why I still like the pasta fagioli! I better like it, anyway. I am away from home for the next two days and won't have any refrigerator, so I am having two days of pasta fagioli! Oh well.
I, too, would like to see less dependance on cheese. I LOVE cheese, but my love for it has left me with a very high cholesterol problem and an extra thirty pounds in less than a year! OOPS! Yes, I eat a lot of it. (I noticed that the stuffed shells have 1/3 of the fat grams from saturated fats!)
I would love to see more veggie-centered entrees like roasted veggies and couscous or bean-centered entrees. How about a pinto or black bean burrito stuffed with brown rice and veggies? I would also like to see more meat substitutes that are vegan - tofu, seitan, other soy products.
I am with the others about eating triple grain crisps every morning. On nights before I am to have it, I actually wake up in the middle of the night to make sure I haven't overslept my alarm. Sad, but true.
