I'm new and since veggies can be "free" lets all share how we like to cook them up!
I like to bake my baby carrots with some seasoning in the oven at 350 for 20 minutes!

Great topic! Always looking for ideas...
Quartered Artichokes (canned and drained) w/a little balsamic vinegar, a few drops extra virgin olive oil (not free/optional) and some salt/pepper/vinegar powder
Cauliflower cut into 1/2 inch (approx) pieces and tossed w/ a little extra virgin olive oil (not free though, use a spray of EVOO Pam for free) and Ms. Dash; bake at 450 for 30 minutes.
Green beans with four-color pepper, seasoned salt, garlic powder and minced onions.
Favorite is squash, zuchinni, mushrooms, red peppers, broccoli and green onions chopped up and sauteed w/ salt, pepper, garlic powder in the olive oil (limited/optional) for about 5-10 minutes. (For breakfast, I do this but add 1/4 cup Southwestern flavor Egg Beaters and add the smallest touch of feta cheese; exchanges are 2 veggies, 1 lean meat and 1 fat.)
Baby carrots cut up, a little water, splenda, cinnamon and Molly McButter. Nuke it for 3-5 minutes.
Banannas sauteed in a pan with Butter flavor Pam and topped with Brown Sugar Splenda (limited serving), vanilla extract and a touch of cinnamon. This is great on a yogurt day if you save your breakfast or snack fruit.
I have also found that I would rather use olive oil as my fat - I don't use dressing, margerine or any other type of added fat and have not found it to hinder my weight loss, but it has made a tremendous difference in the taste of veggies. I'm not recommending it for all, it seems to work really well for me.

This is a wonderful soup that is free and full of nutrients! 2 zuccini, 1 carrot, 1/2 onion, can of chopped tomatos, ~ 1-2cups chicken broth, one leaf of collard greens, 1 bay leaf. Chop it up and cook! You can really add any of the good vegitables to this. I used it when I felt hungry and when I didn't feel like eating vegitables plain. This made about 4 servings.
Orange glazed carrots - steam or boil (not too mushy) remove water, add small amount of orange juice, touch of ginger (if you like)and simmer - add a small amount of arrowroot to thicken slightly.

ok, this isn't a way to cook, but I just found I can't belive it's not butter spray in Garlic and Herb Flavor...it is GREAT on veggies!

I found a really fun way to prepare my veggies. Whether I am using frozen or fresh. I put all my veggies in my rice steamer. I make sure to add lots of water because it vaporizes off. Once the little button goes up they are done. Then I drain the water, add some SmartBalance (1T) marg., or Pam Spray (butter.) Mmmm garlic and herb, it sounds good. This is wonderful. Hope this helps you.

Last night I took a Vidalia Onion and sauteed it in Pam. I added a tablespoon each of chopped garlic and ginger then added red and orange sweet peppers and fresh slice mushrooms. It was really good and my family loved it as well.
