I have several allergies so ~30% of the jc meals are off limits to me. I find the chicken sandwich kind of tough... Any one have any hints or ideas?????? Thx! k

I found the chicken a little tough also. I had it today for lunch, and decided to make chicken salad out of it. I cooked the chicken, let it cool a little, put it in the Cuisinart to chop it up a little, then mixed in onion, celery and ff mayo. It made a very tasty sandwich that wasn't hard to chew.

Put it on a George Foreman grill til it's heated through. Then chop it up and add bbq sauce. Put the bun on the grill for a few seconds. YUM!

I cook up some sliced green peppers and onions, slice the chicken, add it to the pan with a splash of balsamic vinegar. Put on the bun with spicy brown mustard - yummy!

Don't cook it for as long as they say, I noticed that is what makes it tough. Some of these suggestions are good, but if you are at work and can't do some of them, just cook it for less time.

I put the whole thing in foil in oven for about 20 min, then take the bread out and let the chicken cook about 20-30 more minutes. If you don't, it is cold inside. I would imagine this would be tough if microwaved. Maybe you can microwave it some then finish pan frying it.
If it is cooked well, it tastes great.

OK - things to do with the Chicken Sandwich!And, never ever heat the roll and the patty together - heat separately...if you can, let the roll defrost naturally on the counter or use the defrost cycle (or 50% power) on the microwave so the bread doesn't get tough.
Top with whatever you like - from sauted veggies to just lettuce and tomatoes (I toss the suace packet and use a condiment depending on what I want to do). That is as a straight up sandwich.
Make it into an Italian chicken parm with a few TBS of low fat tomotoe suace with garlic, onion, and mushrooms...then, if you have a cheese exchange you can use - melt some motz on it!
Make it a cold chicken sandwich. Defrost. Cube meat. Add 1 TBS of fat free mayo, mustard, diced onion, tomato, celery (whatever you like)...let it get cold in the fridge...either put back on the roll to eat or top a salad with it...Then, toast the roll on the side and add a bit of butter spray to the roll.
You can make any kind of chicken salad you like: spicy, mexican, chinese...
You can make it part of a stir fry if you want - dice up the chicken, stir fry a ton of veggies up with some soy sauce, ginger, garlic, etc...add chicken...Then, just have the roll on the side again
Make it part of an italian dish - cook up a huge bunch of veggies again, a 2 TBS of some low fat tomato sauce...season with italian seasonings you like - garlic, etc...dice up the chicken...Make garlic bread with the bread with fat free buttter spray or a fat exchange you have for the day...Add fat free motz cheese if you have the exchange for the day!

I cook the chicken breast in the microwave, slice it and add it to my salad. I let the bun defrost on the counter and make a peanut butter and jelly sandwich from it. I use fat-free salad dressing so I have the available fat exchange for the peanut butter.

I put the chicken in the microwave just long enough to warm it...about 1/2 the time called for on the package. Then I put the frozen bun in the toaster to warm it. Sometimes I spray the inside of the bun with a little FF butter spray before putting it in the toaster. Yum!
Also, I really like to put sweet pickle relish on my chicken sandwich...

Check out the new Creative Recipes Cookbook - there's a number of interesting ideas in there! Including adding bacon bits, ff cheese, lettuce, tomoto, and Jenny Ranch dressing - and saving the creole mustard for something. It also lists all the exchanges for the spruced up versions of the entree - my mother has already "borrowed" my cookbook or I'd share more of the ideas .... suffice to say there's several pages of ideas in there!

Not my idea - I saw this somewhere else on the board and loved it. Nuke chicken for 60 secs or so. Brown chicken in skillet, adding some frank's buffalo/hot sauce at end. Top sandwich with lettuce and ranch dressing. Or I just have a salad with ranch dressing. Yummo!

The chicken sandwich is one of my favorite lunches. I get one or two each week. I always pan sear the chicken & toast the bun.
I add different spices to the chicken, condiments and veggies on the bun. My current favorite is Creole seasoning, stir fried peppers, mushrooms & onions.
I also like it with BBQ or teriyaki sauce with a lettuce & tomatoes
I find it makes a big difference if you lightly toast the bun.

Wow, some great ideas! I like to make a "Buffalo Chicken" sandwich out of it. I defrost the chicken in the micro., then pan sear it, then coat both sides with "Frank's Buffalo Chicken Sauce". Then I put a dab of "French's Just 2 Good" Blue Cheese dressing on the bun, add lettuce and tomato and eat with celery sticks that I dip in more of the low fat blue cheese dressing. YUM!

After I FINALLY figured out how to cook this fast, yet tasty, it has become my all time favorite lunch entree item.
1) Microwave only the chicken patty for 90 seconds
2) Brown in skillet with Pam spray (this is fast)
3) BARELY thaw the buns in the toaster
To change it up, sometimes I add some low-sodium teriyaki sauce while it is in the pan browning.
Cooking it in the skillet gives it a restaurant taste. I always enjoy a salad with mine and it is a fabulous meal!

I've been cooking it as some of the others in this post suggested-- for only about 90 secs & toasting the bun-- & that has made it MUCH better. Today, I put a little honey mustard on it & mixed in a little wasabi lime mustard (terrapin Ridge makes this & it is sooo good, only 5 cals per tsp & a little goes a looong way.). It had the best sweet/spicy kick.

I used one of the recipes from the creative recipes book. I added a slice of fat free swiss cheese, JC ranch dressing and a few bacon bits. It was good...a good change for the sandwich. The book has several good recipes in it.

This is my favorite lunch entree as you can do so much with it. I like to pan sautee the chicken with some garlic and allow to cool. Spray bun with ff butter spray and toast in the toaster oven. When cool cut it into croutons, cut chicken into strips and make it into a chicken ceasar salad. You can cut corners if you're in work or in a hurry, but this is so filling and satisfying!!
