I really love the sunshine sandwich, being a man, it really fills me up. I was wondering, has anyone tried making them yourself? using lowfat english muffins, lo fat cheese and egg white? I cooked the eggs in egg rings, but they didn't come out so good, they were kind of flat. Any suggestions?

I got this suggestion from another JCC'er and I modified it to taste: I bake a batch of egg sammy's in muffin tins. I make a batch using egg beaters (the southwestern flavor are really good) and toss in veggies. If you are using regular size pans, each 3/4 cp will usually fill about 1 and 1/4 to 1/2. NOTE: FILL ONLY ABOUT 3/4 FILL! THEY DO RISE!!!!!! Whip them up - or beat in an egg white - just be sure to factor that in same with milk (that is what I did). Spray the pans with Pam. Bake @ 350 for about 10-15 minutes. They freeze well. Make your own sammies! Enjoy!

I followed your directions and made a batch this morning and they came out great! I used a nonstick muffin pan, filled them 3/4 with eggbeaters. Bought healthy choice ham and weight watches english muffins. I made 6 and it tasted just as good if not better than the JC ones and yes they do freeze well The cost of making 6 on my own was less that five dollars. If you have anymore tips let me know.

I usually take cheese from one of my dairy snacks, and put it on top of this....yumm!

Oh my god, what a fabulous idea !!! I absolutely LOVE the Sunshine Sandwich, I can totally visualize myself eating that for breakfast on maintenance and for years into the future ... what a great staple. But I don't want to pay Jenny Craig prices for the rest of my life, and I would definitely prefer to make my own food, and know what went into the preparation, etc - as much as possible.
I love the idea of baking EggBeaters into the little rounds and assembling the sandwiches .... now I can add whole wheat english muffins and make this low-cal breakfast even healthier

If have time, you can also make the french toast using pepperidge farm lite whole wheat and egg beaters, add some ground cinnamon or nutmeg to the egg beaters. Fry using Pam. They are great and freeze well.

Peppridge Farm? Cool! I'm glad it worked out and is readily available. It is easy enough to add fruit of any kind to this. I can't wait to try it... Something kids would like too!
