I know there was a thread like this a while ago, but since there are new folks everyday and we all make new discoveries. I thought it would be cool to share your favorite way to spruce up Jenny foods.
One of my current faves for breakfast is to take the pancakes and chop/slice a banana and top with 1/2 tbs of chopped walnuts,(I rarely eat salad so I have a fat to 'play' with during the day).
I am looking for other suggestions, please feel free to post them here!

Here is what I do. There are very few JC foods that don't need additions.
1. Brocolli Cheese Potato: Dice up tomato, onions and mushrooms. Microwave potato for about 2 minutes - slice it. Top with the tomato, onions, and shrooms. Microwave for another 3 mins or so until done. Top with some garlic powder! Yummy.
2. Tortellini: Dump frozen veggies (your favorite combo) into bowl. Add a diced up roma tomato...micorwave until warm. Top with tortellini, some garlic powder or Tomato and Garlic Mrs. Dash...Microwave until warm. I call that my "tortellini stew."
3. I add cooked veggies as a base to nearly every single dish - for the sweet and sour chicken or pot stickers, I use a chinese stir fry combo with some ginger. The fajitas call for a ton more peppers and onions. Lentils are GREAT over a big bed of steamed cauliflour.
4. None of the pizzas have enough sauce - I usually just get the rising crust: I make a "mash" of chopped garlic, tomato, onion and shrooms microwaved until it basically becomes a sauce. After the pizza cookes about 10 mins, I add this on top of the cheese for a more saucy pizza.
5. Slice off the top of the chicken stuffed sandwich and add tomatos.
6. Chili can be a salad, easily or turned into a really hearty chili with a bunch of steamed veggies with big chunks...
How to make the food into a "different meal": Take the chicken sandwich, thaw - chop chicken and add to green salad...Have the roll as a side...Have the chicken sandwich cold or dice up the chicken and make a chicken salad with some celery and oninion and 1 TBS ff mayo..back onto bun and you have a nice chicken salad sandwich.
The fajitas...Cook up the meat and veggies...cool and top a salad. Take the tortillas that come with it and make "chips" out of them in the oven: cut into 4 pieces, spritz with a bit of non-butter spray, and crisp in a low oven.
The fish and chips must be cooked in the oven. If you don't have time to cook it for the full time, microwave it first until just warm and then crisp under the broiler. Works well.
You can make fries in the oven out of jicama, carrots, yellow or green zuchinnis - just cut in strips, spray with butter spray, and again dry or crisp in the oven...Its easy and fast. If it takes long and the butter spray burns, add it at the very end.
I always have a big salad, steamed veggies or some free coleslaw with meals. Experiment with different things you like. I just do oatmeal now for breakfast mostly, but here are two things to do as well:
The sunshine sandwich is really good with a cold slice of tomato on it (I hate the piece of bacon and the suace and toss that) - add a bit of butter spray to the bun.
You can take the patty and the canadian bacon, defrost, chop...saute up in a pan with some free veggies such as mushrooms, onions, green and red peppers...you can either put it back on the english muffin then or have the bread as a side.
For the bkfast scramble (I do this on my own with egg beaters because its so easy and I HATE that they put potatos and cheese on it - but you can easily incorporate those if you like those flavors - use some premade plain frozen hashbrown for the potatos as the starch). Suate up free veggies (again, my favorites are mushrooms, onions, tomato, green and red pepper, and spinach is really goood in eggs in my opinion)...when those are done, if you are using the bkfast scramble, microwave that up until just done...Dump in the pan with the veggies and heat through (you may need to add a bit of water if its too dry)...
When I do this now, I add an egg beater to the sauted veggies and then have it with a side of a light high fiber Enlgish muffin...YUMMY...you can add ff shredded cheese too if you want.
OK, all I can think of now. WOW - this is making me hungry, lol!

Last night I had the Penne Pasta. I sauteed some veggies first (onions, peppers, mushrooms, and zucchini) I thawed the Penne Pasta in the microwave. Then, I mixed it together with the veggies. I put in my Pampered Chef stoneware pan (the little oval one) and topped with FF shredded cheese. I baked it at 350 for about 15 minutes and had Baked Ziti. It was pretty good. I like the Penne Pasta anyway, though.
Thanks for the ideas Jen. I printed them off to try some.

I love all the great suggestions people give in this type of thread. I'm not creative, but I enjoy benefitting from others' creativity.
Like everyone else, I tend to add extra veggies to everything. I like Rotel in my chili, bean sprouts and pea pods in my sweet & sour chicken, and mushrooms and peppers in my fajitas.
My favorite suggestion from another poster was to take the fish and chips, throw away the chips and make fish tacos. Delicious.
Someone else suggested making a shepherd's pie out of the beef and mashed potatoes, and I'm going to try that. I don't have the exact recipe, but I believe it had added sherry, herbs and mushrooms in the beef/gravy and was topped with a mashed potato crust before broiling.

As far as making meals a little different. I'm not a big "meat and potatoes" fan so I wasn't really looking forward to the meatloaf dinner tonight. I was inspired by someone else's idea to turn the chili or SW chicken into a stuffed pepper.
I cooked the meatloaf dinner til it was almost done, along with a halved red pepper. Then I smooshed up the meatloaf, cut up the carrots and broccoli, added some onions, canned diced tomatoes, and a few splashes of worchestishire sauce. Stuck it all in the pepper halves and sprinkled with 1 ounce lf cheese. Baked it for an additional 10 minutes. Ate the potatoes as a side. Much better in my opinion, in fact quite yummy!

I love stuffed peppers. I've got to remember to try this. You could do that with almost any of the entrees, I would assume. I bet the fajitas could be good like that. YUM! I'm going to try that this weekend with the meatloaf, I think.

Yep. In fact, I was so happy with the results of the meatloaf, I did it the next day with the turkey burger. Turned out delicious again! AND I saved my bun, toasted it, smeared it with roasted garlic, and ate it with my chicken fettucine that night. Thought I was living it up for sure!!

Well, Nat, I tried my meat loaf as a stuffed pepper. Let me tell you, I thought I was in HEAVEN! I LOVED it! I am going to have to try the turkey burger and use the bun for dinner. I wish I had some of the creativity that everybody else seems to have. Thanks God for these boards! And, thank YOU for the ideas!

I'm not too creative when it comes to this kind of thing-- which is why JC is working I guess, but I did find that the Thai lemongrass noodle dish needed a little beefing up. I added a cup or so of steamed spinach and it was so good and filling for lunch.
I highly reccommend this.
Also, I make sort of a shepards pie with the meatloaf.. I mix in lots of peas (which I know are limited) and chop up the meat into little bits. It makes it much more filling. I will try the pepper idea when I have some time!

I like to make the fajitas into quesadillas. I saute and season the filling as directed. Then spray the non stick pan with Pam and put in a tortilla. Top with cooked chicken and veggies then lowfat cheese (saved from +1 meat at breakfast). Top with the next tortilla and flip so it gets brown and crispy on that side too. Cut into 4 yummy pieces and enjoy with salsa and ff sour cream. So good it feels like cheating.

DUH! Thanks for the fajita into a quesidilla idea! ROCKING!!! I can't wait to try that!
I like taking the potstickers and beef chow mein and putting them on top of the following in a big bowl:
a cup or two of broccoli, cauliflower, or sugar snap peas...
a combo of the following (to taste)
[*]soy sauce, rice vinegar, sesame oil (just a little tiny bit!), a packet of splenda
and my favorite secret is Tabasco brand "sweet and spicy" condiment! Yum!

Each weekend, I put green, yellow, red, orange peppers and zucchini through the food processor and save it all in leftover containers.
Then throughout the week, I'll use a few spoonfuls of this instant veggie mix either in:
* a salad
* over any of the JC pasta dishes, mixed w/ diced tomatoes, fresh spinach, mushrooms, a bit of tomato sauce; it just about triples the paltry amount of any of the pasta dishes!
* chili, to volumnize it for a taco salad (low-fat tortilla chips, lettuce, FF cheddar, FF sour cream - YUMMY!)
* added to the fish from the fish/chips JC meal (give french fries to husband), w/ tortillas and sour cream for fish tacos
Doing all the chopping on the weekends makes it so easy/quick during the week and you don't have to think about which veggies to eat today...just grab and toss!

I like to use Steve's & Ed's Buffalo Wing Sauce on MANY JC items...breakfast stuffed sandwich, fajitas, a dipping sauce for any of the pizzas, etc. It gives a great taste and is not too spicy either!

I have found that simply adding Tabasco sauce to some meals REALLY helps.
I had the breakfast scramble this morning, which I like anyway and adding 6-7 drops of tabasco to it and stirred it up and YUM!!!!!!

Have the chicken fettuccine on a day with a lunch that needs an extra 1/2 or full meat serving, and save the meat serving for dinner.
Saute up a skillet of garlic, spinach, mushrooms, asparagus spears, artichoke hearts, peppers--whatever you like. (If you need to add a fat exchange, throw in some sun-dried tomatoes, too--packed in oil is what adds the fat.) Then, toss in some shrimp or scallops to make up the meat exchange.
Use as a bed for the fettuccine. Wonderful! My husband always looks longingly at this one. (Of course, now that I've been on the program for 11 months, maybe that's
me he's gazing at! )
