I'm really getting bored of these. As a vegetarian I have too few options with such and a limited menu. I was wondering if any of you have been creative with these meals and turned them into something wonderful that would give me more options. Thanks in advance!! Lynn

I add veggies to my pesto pizza - red, yellow, green peppers, red onion, mushrooms. Add a little low fat mozzarella or Parmesan and it's really great! I also always have diced tomatoes from a can (there are so many variations now!) always on hand to throw on top of my pizzas, penne pasta, raviolis, etc. I like to have stewed tomatoes with my mac and cheese. I admit it's not very creative, but it makes for a good healthy veggie meal. Also boca makes a good Italian sausage substitute that adds a little zest to the Italian meals. Hope this helps!

I put salsa on my broccoli and cheese potato, and I have heard others make a soup out of it by placing it in a blender or food processor with broth.

What a great idea with the potato - potato soup. I would never have thought of that one! Have to wait till next week to give that one a go since I didn't get any this week.

I tried the non-meat menu for a week and have to agree that it seemed somewhat limited and uniform. I think the biggest issue I had was lack of texture variety. I would use tofu, jicama, lowfat cheese cubes, soy patties, bell peppers, mushrooms, water chestnuts, radishes, and other texture variants. You might also have to get a little more creative with spices: oregano, paprika, cumin, etc.

On the pesto pizza I add artichoke hearts for some variety. The ravioli on a bed of spinach with extra diced tomatoes is nice. I will have to put on my thinking cap for the others.

I am not vegetarian, but also have tendency to get bored. In addition to the recommendations listed. You might try a Lean Cuisine here or there...they have a different broccoli cheese potato meal and a few other pasta dishes that are Veg. Just be careful of the sodium. I try to stick with 600mg sodium or Less on the LCs. Just adds a little variety and I have found no difference in my weight loss...FYI, Nestle owns both JC and Lean Cuisine.
