this was mentioned under the turkey burgers as a good side dish with it - now we all want to try it - please tell us how?

Not sure the exact recipe, but what I would do: Lightly steam a cauliflower until just barely done. Immediately immerse in cold water. I would then dice up / finely chop celery and onion (some red pepper would give it a nice color, I think). Amounts used to taste and preference.

Make a "jenny approved" dressing - whatever you like for potato salad / each person will be different: I'm making this up totally, but this is what I'd start with:
1/4 cup fat free mayonnaise (that totals 4 TBS of fat free mayo, so you can't eat all in one day, technically - or, use less mayo).
1 tablespoon cider vinegar
2 tsp Dijon or spicy mustard (I'm not fond of Dijon, but some people are)
1/4 teaspoon salt (or less, if you can)
1/4 teaspoon black pepper
If too sour or if you want to sweeten, I'd add a some sweet n low or splenda!
Toss with the veggies and chill. Totally done to taste preference.
Also, you can steam cauliflower until well done, then, drain well, mash with a small dash of ff milk (or even sour cream), a touch of I can't believe its not butter spray, salt, and pepper and viola - mashed pototoes!

Jenrdn69 - Ooooooh, I am going to try this. I've always made cauliflower so that it is like mashed potatoes, but I haven't gone further into this and made it into mock potatoe salad. Thanks for the post.
