Hiya... I just started this week and I did some reading on these boards to see what most people liked. The breakfast scramble, from what I remember, wasn't getting very good reviews. But I gotta tell ya... it was wonderful! The best breakfast I've had so far. Tastes just like the real deal and the potatoes were just perfect. I put a little ketchup on it.... mmmm mmmm good. I'll certainly buy a few of those for next week

I LOVE the breakfast scramble - here is how I do it. I had always done something similar on my own, but this works well.
Cut up a bunch of veggies that you like in your eggs: I like green pepper, onion, tomato and mushrooms. I saute up these (a ton of them) in a pan (using PAM) and add a dash of salt and pepper (if necessary I add a bit of water).
Once veggies are done to my liking, I microwave up the scramble - not quite all the way. Then, I add it to the pan (along with a dash of water if the veggies get too dry)...Cook the whole thing up for a minute or so.
I get a HUGE plate for breakfast (usually do this on a Sunday)...YUMMY!

I love the Breakfast Scramble! I always have it at least Three Times a week! I don't know about everybody else, but I definitely need protein in the morning. If I have cereal, I am starving by 10:00 a.m.m

Cathy - Isn't it great? I'm a big volume eater, lol and I need to fill up, so this really fits the bill for a Sunday morning. It is almost like something you'd get at a restaurant!
When not doing JC, I've done this (no potatos usually), and used egg beaters and its just as good...You could use a bit of frozen hashbrowns, cooked up to add the potato if you like it on your own.

Try saute'ing those vegetables in the I Can't Believe It's Not Butter. I pour the butter in a pan and saute' my mushrooms and I do asaparagus everynight lately I squees a little lemon juice in the butter and saute' and it's delicious.

Hey Chyler - thanks for that idea; I'm so used to Pam, but the buttery flavor shoudl be good - yesterday at the grocery, I just picked up some "Smart Balance" no calorie spritz (just like Can't believe its not butter)...I'll do that on Sunday...

Finally! Other people who love this breakfast! I always hear people at my center complaining about it but I love it - I'll have to try it with those added veggies, I've just been adding a little salt and pepper to mine and it's heaven
