Not so much a comment on favorites as a question --- what do you do for the meat exchange to add to the Garden Vegetable Soup? Cheese is what I'm thinking, but finding really lowfat cheese is hard and the lowfat ones I've found aren't ones I think of going with soup. But open to any ideas ...

You could do some chicken breast meat (real chicken breast, not processed cold cuts). It's a quick add-on to just dice up some cooked chicken breast and toss it in the soup
You could also have, on the side, some fat free cottage cheese for your protein. I like to mix a Tbsp of medium salsa to give mine some "zip"

I don't eat any meat except seafood, so I've done the following to the salad that I eat with the soup:
-Add some canned tuna fish
-Sprinkle some lite tofu with salt and pepper and then dice it up over the salad
-Add one serving of garbonzo beans (chick peas) - note that these count as one meat and one starch so be careful!
You could also sprinkle parmesian cheese on the soup, since the cheese counts as a meat.

I've recently tried diceing up a cooked Boca burger and adding that to the soup. It's not bad!

I was wondering the same thing. I thought about boiling an egg as my meat.
I did not think to add tuna on my salad. That's a really good idea.

The Boca Burger is a good idea. I think I will try Morning Star's Veggie Crumblers instead.
