So, I tried the cheese enchilada last night. I love Mexican food and was hoping I could get my weekly Mexican fix by eating it, but it was just terrible. I could barely gag it down and I can normally eat anything. I even cooked it in the over rather than the microwave. Anyone have any tips to make it better? I tried putting hot sauce on it, but that didn't help.

I love the cheese enchilada! I put a dollop of fat free sour cream on top.

It really is interesting how tastes vary... I too love Mexican food...Love Italian food ... but the cheese enchilada and chicken parmesan are the only two meals that I won't buy again... everything else I liked ... apparently they are introducing a burrito this month, hopefully it will be better than the enchilada...

I use fat free sour cream and Taco Bell restaurant style hot sauce on top. Very good!

I don't care for it either.
My staples are the chicken sandwich, pizzas, multi-grain cereal, turkey jerky, mostly frozen items. I like the chili con carne better than the turkey chili.

I love the enchilada- my counselor said it is even better after you toast it so I took her advice.
I microwaved the meal, then put it in a toaster safe bowl, and toasted it on "dark". It came out all crispy & crunchy. Then I add some salsa and fat free sour cream. Very tasty!

I actually overcook it in the microwave on purpose so that it gets a bit "crunchier" too. I love it, just had it today, in fact.

Since it was the texture that I didn't like, maybe I will try it again under the broiler (don't have a toaster oven...)

How weird! I absolutely love the enchilada! I put it atop a bunch of crisp lettuce and add lots of salsa or sometimes hot sauce. Sometimes I also add a dollop of FF sour cream and if I have the fat to spare, I throw on some sliced black olives. YUM! It's one of my faves. My consultant adds chopped tomatoes and onion. I don't like either, but maybe you can give those ideas a try...

I LOVED the cheesy enchiladas at first and then quickly got sick of them. Overcooking in the microwave made them taste better (the extra crunch).
Maybe you can throw them in a pan on the stove to make them crunchy? Crunchy made them taste better for me.

It is so true how we all have differnt tastes. I was hesitant to try the cheesy enchilada when it first came out a few years ago due to the tofu. My consultant convinced me to try it. I loved it and still do. Just as is, I just add a salad.

Well, you all have convinced me to give it another chance. I will try overcooking it a bit to make it crunchy and adding the salsa as suggested. Thanks for the ideas!

Well, I tried it again today... in the oven, under the broiler, then cut it up and put it over a salad with salsa and ff sour cream... it was better, but it still has a gummy texture...maybe I'll try it again in a month or so when I want a change...

Well, I tried it again today, but cooked it in the microwave this time. It wasn't nearly as bad as the first time; however, it could definitely use some salsa or hot sauce and maybe some FF sour cream as others have suggested. I'll have to bring some with me to work next time.

I had this on Friday for lunch at work. I brought a tiny tupperware container that had FF sour cream and hot sauce mixed up in it and topped my meal with that. Oh wow - what a delightful difference that made! I'll be having this again exactly this way again.

I tried putting it over a bed of lettuce with lots of salsa and some low fat sour cream today, as others have suggested, and that made a huge difference. It was really good this time and I'm actually looking forward to trying it again next week. Wow, I didn't think that was possible!!!

I love mexican food....I was actually very disappointed with the Enchilada. I think it is the most disgusting thing on the Jenny Menu and though I'm sure it tastes better when you add the sour cream and what not to it...I just won't take the chance of going through that nauseous feeling again.

TWO thumbs down for the Cheesy Enchilada . For anyone that LOVES Mexican food as much as I do, try the Southwestern Chicken Burrito or the Southwestern Chicken with rice and beans. They are both SO good.

I will give it a shot with the whole "overcooked and crunchy" idea.
It's so bland though. I always have to add tons of spice to it...

I was really scared to try this one, and now I know it was with good reason. I was reading your posts while attempting to eat it, and maybe that was half the problem, but I thought it was DISGUSTING!

I absolutely hated it(and I love enchiladas, but my way). I ended up throwing it and the one in the freezer out.

I LOVE the cheese enchiladas. I overcook them as others have mentioned and add tapatio hot sauce. I am a vegetarian and if it wasn't for these, I wouldn't have much to eat. I eat these about 4 times a week, sometimes for lunch, sometimes dinner.

Hi... I'm new and I've really liked the food so far except for this one. OMG. I added salsa and then some FF sour cream.... then I put salt on it.... then pepper.... then garlic powder... then I just suffered through it. I'm not picky, but this has no taste at all and for some reason you cant really add any taste to it either. There's much better entrees.

I live in Arizona and grew up with great mexican food. It is my favorite. So I really did not expect to like the enchiladas, but I did like them very much I get usually twice a week. Of course they are not as good as the real thing but if they were they would not be low calorie.

I'm back on Jenny after determined to finally lose the weight! yeah. Anyhoo. I had the cheesy enchilada on my list today and was nervous because in past tries with Jenny i'd get tired of the food. Plus, i don't think I had ever had this one. The information on this board is invaluable! I added cilantro and green onions and salsa to my enchilada, microwaved it then finished it off in the toaster oven and it's goooooood! Thank you thank you thank you. I'll have to try it with sour cream next time!

Cheesy enchilada is one of my favorites too. I get it every week. I just add salsa. I like almost all the entrees with cheese !!

This is one of my favorite items. I like it as it is, but another way to make it a really filling meal is to make a stuffed pepper out of it. I just cooked it per normal and put inside a cooked hollowed out green pepper and yum! On the SW Burrito, I don't like that one much as is, but what I do is I cook it, chop it up, and put it over my salad and add some FF sour cream.

Every time I think of the cheesy enchilada I get sick to my stomache. I read the ingredients and saw that one of the ingredients is fat free cream cheese. I think that is the taste and texture that makes my stomache turn everytime I think of the enchilada.

Wow, it is my very fave lunch!! I usually eat it 3x per week. I melt a slice of fat free kraft cheddar on it and add hot salsa. I LOVE IT. I guess we all do have different tastes. I could eat it every day.
