I just cooked up the Cheesy Enchiladas....I was so grossed out. That is the first food I've had where I had to throw it away. Instead I ate a Lean Cuisine that I have on backup so I don't ruin the rest of my week's menu.
Everything else I have had though has been pretty good....I guess it's just trial and error.
How are the FAJITAS??? I hope they are good because I bought 2 of them!

I love the enchilada. I add a bit of ff sour cream, and Taco Bell restaurant style sauce and it is really good.
The fajitas are good too....same thing...sour cream and taco sauce. I love any kind of Mexican food though

I like the enchiladas also. Here in L.A., Mexican food is a staple and I think they did a great job with the enchiladas. I get fresh salsa at the market or at Trader Joe's and pour some on top which spices it up a bit. The Christmas food here in L.A. is tamales .. so each area of the country has different foods that we are used to. I imagine enchiladas in many parts of the U.S. and Canada are an acquired taste.

I do love the fajitas though, this week I got the fajitas for 3 of my dinners.

Enchiladas I wouldn't say are an aquired taste in Canada. The problem I have with the JC ones is the filing has the consitancy of paste and is completely flavourless

The enchiladas are DISGUSTING! It was just a pile of mushy cream and cheese in my opinion. But, on the other hand, the fajitas are to die for, and I eat them every week. Sometimes twice. Just depends on your tastes, I guess.

And I like the enchiladas and find the fajitas way too much work and tasteless. That's why they provide all these foods, I guess, as we are all different. I dump the enchilada onto a plateful of salad greens from one of those bags I get in the market and then dump some fresh salsa on the top. It's really disgusting looking but tastes like a tostada without the shell which is what I get when we go to Mexican restaurants.

I really like the enchiladas and anyone who is missing Mexi food (as I was) should try them.

I too didn't care for the enchiladas - I tried them when I first started, then several months later tried them again. I do however like the fajitas - I add extra mushrooms and peppers and toss the fajita filling on a big salads with salsa. Then on occasion I will add a little fat free cheese to the middle of the 2 tortilla shells and grill them to make a quesadilla - it's really good and adds some variety. It doesn't take much cheese to give the flavor.

OH now i cant wait for my first meeting tomorrow. I love mexican food. the last "diet" I was on did not let me have mexican food.

I LOVE MEXICAN FOOD! I was looking forward to the enchiladas, knowing they would become a fav of mine. YUCK! Tasted like warmed up puke! Sorry...but it did. First JC thing I threw out. And after 2 weeks, that says something.

I enjoy the cheesy enchiladas, myself. But if you want a really good enchilada recipe, go check out the recipe forum where I posted a Turkey Enchilada recipe. It is soooooo good!

I just had the enchiladas and I loved them.. What I did was add 1/4 cup Old El Paso hot enchilada sauce (1/4 cup is 25 calories) and a dollop of FF sour cream. I love that enchilada sauce... I could drink it. lol. I'll probably add it to the southwest chicken also.
