I have had a huge urge to snack this past week. I think if I eat any more raw carrots I will go crazy. Does anyone have suggestions on other veggies that are good raw? Or anything to spice them up? I am in desperate need of "free" snack foods. Thanks!

Celery
Tomatoes (Cherry, Grape, or large ones)
Radishes
Broccoli (only if it doesn't give you gas)
Califlower
Mushrooms (although not on my list, some people like them raw)
Onions
Red and Green Peppers
As for spicing them up, there are a number of things in the free and limited free lists that you can use.
salsa - 1/4 cup is free
fat-free cream cheese is a limited free I believe (don't have my list with me right now so am not positive about the amount but I think it is 1 Tbsp)
vinegars are free (although some are high sodium)
1 Tbsp of fat-free salad dressing is a limited free (I think, again CHECK your list)

Try jicama, it looks like a brown round ball.
It tastes like a cross between a potato and an apple. You can slice it and eat or raw or cut it into strips and put some paprika type seasoning on it and bake it in the oven, like fries.
In some stores they sell it pre-sliced in an container.

OutToLose's recommendation about jicama got me wondering if it was a vegetable or a starch, so I did a search on the Ask the Dietician forum and
it's a VEGETABLE
1/2 cup = 1 vegetable serving.

That is a great idea! I like putting them, chopped up, in my salads already. I don't know why I didn't think to cut them into stips. I will have to try baking them. That sounds like a yummy snack also. Thanks everyone!

fennel
mild sweet licorice(anise) taste. The crunch of celery. Also very good roasted in the oven at around 400-450 for about 45 min.

I like taking a variety of raw veggies to work....broccail, cauliflower, carrots, turnips and jicama....a small amount of ranch dressing and you have some really good crunchy stuff..
And they really fill you up...Sonya

Beets are also great (bit time consuming to prepare but well worth it). There are also great low fat hummus recipes out there (in effect, chick peas no fat yogurt, spices and lemon juice) which flavour up the veggies.
I also have become quite addicted to the light Jello my consultant told me about at my first weigh in ! I try to always have a big bowl of it in my fridge as when I don't I find myself in trouble .. if you know what I mean !

Try simmering a pile of chopped vegetables in some fat free, low sodium chicken broth with some water added. Add pepper or other seasonings to taste (but no salt). It makes a large bowl of veggie soup that is free !

sliced cold cucumbers alone or with the above mentioned spicer uppers. My personal favs with a huge punch of flavor--Clausen kosher dill halves or the sour pickles!

Be careful with pickles.....they can have salt and it will make you retain fluid...just a FYI...

My consultant suggested that I make a "Greek" dip of plain yogurt, cucumber and garlic for my carrots and celery. I am hungry, especially at night on 1200 calories. I am also sick of plain baby carrots and celery so I am going to try to make some 'dips' to jazz things up a bit!!

Hey... I have a new one.
Try yellow squash or zucchini (or both) sliced into chips. Toss them on an already seasoned cast iron pan (or into the oven on broil) and lightly brown each side. You can pepper them or add any spice you like and then eat them with salsa or a dip. I found a Ranch-Chipotle flavor packet dip (5 cals - add fat free mayo and fat free sour cream) that these chips are excelent with!!! I practically lived on these my first 2 weeks.

I love the following raw and eat them all the time: sugar snap peas, snow peas and water chestnuts. I always have a can of water chestnuts in my fridge and add them to almost everything. Since it is a free/unlimited food I have no problem eating a can of them! Good luck! :)

Dip veggies in Jenny's ranch dressing. I did that with baby carrots and it has helped with my urge to snack.

I've found a great limited free veggie dip. Mix together an equal amount of both fat free cream cheese and fat free french dressing. It works best if the cream cheese is at room temperature. It's an awesome addition to any raw veggie - and it doesn't take much to add lots of flavor. It keeps well in the fridge, too.

I know you said raw veggies - but you can always make a big ol sir fry and ration out portions for you to much on.

yes you can stir fry veggies also....just use some pam or a little bit of water in the pan and it is wonderful...hold off on the teryaki stuff cause it can cause you some problems. Hope this works better than the raw carrots LOL

Have you tried Celery root? It sort of looks like the jicama. It's a free veggie. You cut it up, watch the fingers, and boil until tender, the mash it. You can use part of your nonfat milk allotment to make a mock mashed potato out of it. Use some seasoning to give it some taste, like picante sauce if you like some zip.
