I am eating the chicken fajitas tonight for dinner, anyone out there have a creative suggestions to make it more "fun"??

Hi-
I had this for the first time last night. If I did it again, I'd leave out the frozen JC veggies and use all fresh, because they got rather soggy & icky. I used some "nocal" olive oil spray and sauteed some garlic, then added onion, red pepper, and the JC mix w/seasoning. When it was almost done I added some broccoli and baby spinach. I toasted the tortillas in the toaster oven, and topped it off with some Chalupa (my favorite hot sauce.) If I'd planned ahead, maybe I could have fit some ff sour cream into my day, but it'd be too dangerous to have around the house for me! My boyfriend was jealous! It was a really good, heaping meal.
(though it seems silly to pay so much for 2 totillas, a little bit of frozen chicken, and some seasoning, I really would ditch the veggies.)
It was fun to be able to cook again!

I agree with you munki, it does seem like a lot of money to pay and then toss half of it! I too take the veggies out so I am left with a little bit of chicken and two tortillas, I can do this on my own!
I have addes ff sour cream, lettuce, tomatoes which makes me almost feel like I am having a taco!

I prepare my fajitas ina skillet with a little olive oil spray. I lightly sprinkle the tortillas with Mrs Dash and after sauteeing the veggies and chicken (you can always add more veggies) I fix it like a quesadilla, with one tortilla on top of the other with the mixture in the middle. I cut them into four little pieces. It continues to be one of my favorite dinners. The tortillas are crunchy and tasty and I love the seasoning packet provided. Hope that helps make it a bit more enjoyable.

my grocery has a pepper stir-fry blend in the freezer section. So add more veggies.
Add cumin to the fry pan for an extra kick.
Put salsa on everything.

With the chicken faijtas when I cook them I use some lime just give it some extra flavor.

The seasoning in the fajitas is so wonderful, I'm ordering an extra so my
onion-loving daughter (skinny, ballerina)
can have some too.

I go crazy here. I take out all the frozen veggies and add in some sweet onion and red pepper. I saute the onion and pepper in fat free veggie broth with some garlic powder then I add my chicken and seasoning packet. I saute it all together until it is where I like it. Then I put in on the warmed shells with lettuce and lots of salse (fat free kind)and if I have room some low fat or fat free sour cream. Just a touch will do you. THis is one of my FAVS!!!

on the day I eat my fajitas, I eat the strawberry bar for breakfast because you are suppose to have an extra ounce of lean meat with your starwberry bar. Instead I use it for my fajitas. I add an ounce of pre cooked chicken, onions, bell peppers, mushrooms. Since it is so much, I just was the shells and lay them flat on the plate and then top with the chicken, onions, bell peppers, mushrooms, lettuce, tomatoes, salsa, sour cream. I have to use a fork and knife but it is hmmm hmmm good.

I had the fajitas for dinner last night. I am only on my second day but I did JC before and remember the fajitas. I happened to be doing some Easter cooking last night and was making sausage and peppers. I cooked the peppers and onion in my wok to cook them without adding any calories. So I just pulled some out of the wok and added them to my fajitas. I put a dab of ff sour cream and it was wonderful! You just need more veggies. I froze a container of peppers and onions but now wish I had frozen it in individual serving bags so I could use it for this. Oh well, next time!

I made up the fajitas like quesadillas by smashing some chickpeas (garbanzo beans) with part of a roasted red pepper and the seasoning. Then I spread that on the tortillas and filled them with the pre-heated veggies (minus as much fluid as I could drain, and most of the onions which I don't like). I folded each in half and put them in the oven to crisp, truning after about 8 minutes on each side (350 oven). I found they weren't quite crip enough, so I used the broiler for about 45 seconds per side then they were tasty.

I just had these tonight. I cooked the fajitas with some lime (really wanted to add some Cabo Wabo tequilla but I was good and didn't) and put a lot of cilantro with the fajitas. Added some extra spices in it. I love garlic so added a bit of chopped garlic and some Emerils Essence. Came out great. Then I made the sour cream/cilantro dip and it was awesome.
