I was just wondering if anyone would like to share some of their creative suggestions for making the JC food a little more interesting. I know there is a book, and a list on the website, but does anyone out there have anything they would like to share? I read somewhere on here to put Pasta Fagioli (sp?) on top of eggplant. I did it last night and it was great! Let me know!

Ok, this was not my idea but it was good. I stirred the canned torellini into some of my homemade veggie soup for tortellini soup! Then sprinkled parmesan cheese on top. It was outstanding (and very filling).
Another idea I can't take credit for....turning the veggie burger into a "faux Big Mac". Thank you out there to whoever's idea that was, I can't remember. The first week I wasn't crazy about the veggie burger, now it is one of my favorites. All you need is a slice of lowfat cheese, some fat free thousand island dressing, lettuce, chopped onions and pickle. Also you spray the bun with butter spray and grill it.
