I stuffed my Tuna Salad into half of a yellow pepper (I first, obviously removed the seeds) for lunch today. Then I ate my crackers/fruit later ... very filling!!! I'm excited because it was delicious and I think its going to be sooo nice and refreshing and light in the summer!!!!!

I had the chicken salad yesterday, made a bed of spinach with a capful of lite balsamic dressing, flowered a big tomato on top and then put the chicken salad on top, crackers on the side. very tasty and pretty to look at. Filling also. |
