Southwest Style Chicken Burrito, I made it AMAZING AND FILLING!! |

Im new to JC(just started Monday). So first thing I did was get on the BB and see what everyone thought of the food. After reading some not so good things about the burrito I was not excited to try it today. Not only has it gotten bad reviews but it was TINY when I took it out of the box. I'm not a big portions person but even this was a stretch for me. So I decided to try it my own away and it turned out sooo good. I think I could eat it every day. First I defrosted it in the fridge overnight then seperated the filling from the tortilla. I put the tortilla under the broiler a few minutes on each side until it was crispy(Im a big crunch person). I cut it up into 8 triangles to make chips. This first part came from ScubaScorpio...so thank you for the idea! Now for the yummy part! I took my fat from dinner and used it for lunch. I put 1 tsp garlic olive oil in a pan along with some minced garlic and a handful of mushrooms. After cooking the mushrooms for a few minutes I added a handful of diced onions and a handful of diced green pepper. 2 minutes for those to cook and I added in the burrito filling and some crush red pepper flakes(I like things spicey). I cooked until heated all the way through and added my 1 oz of non-fat mozz cheese and let it melt. Then I took a chip, piled on some filling and topped with a spoonful of thick and chunky salsa and bam! I had an amazing twist on Nachos and I was barely able to eat all of it. I haven't tried to eat the burrito as it comes but after this I don't think I want to! I hope this comes in use for some of you. I also think you could do this the night before and just heat the filling up in the microwave at work the next day and it would be just as good. Good Luck to Everyone!

Very impressive for a JC newbie!!! Usually, people don't become inspired to modify JC entrées until either they've tried them once as they or, or have become bored eating the same old, same old. Your idea sounds fantastic!

Pooziney-
Im not a fan of frozen or boxed foods so I figured if I made it so I would love it the first time I wouldn't be discouraged to eat it. As silly as this is I also imagine I'm eating take out because if I think of it coming out of a box I start to dislike it but when I said, no I just order this is made it taste so much better!! I guess it's a little mind trick for me. -------------------- |

I love the burrito just the way it is....But I have to say your idea sounds SO much better!

I'm actually eating the burrito rightn now and it's actually pretty good. I work, so I can't do that whole cooking thing for a lunch entree but maybe for dinner, it did sound yummy...good going.
