Cooking the BBQ Pizza

I am 0-2 with the BBQ pizza's (cooking them that is). I've been using a conventional oven, and have been
following the instructions to the letter. Pre-heat to 400, then bake for 22 minutes. Each time the crust has come out hard as a rock.

What am I doing wrong?? Is the oven too hot? am I leaving it in too long???

I'd love to hear tips from any pizza pro's

I only cook it about 18 minutes on the rack. hope that works

Well, I am definitely no pro but I can tell you a funny story about cooking the BBQ Chicken Pizza (it is the only way I cook it now by the way).

My hubby and I are both on JC and we are sticking to it and haven't cheated. So one night we get home from the twin's football practice late and we are famished, absolutely starving. Practice went way long and should have taken one of our snacks with us but we were kept out on the field way longer than normal by the coach and didn't plan for it. So we walk in the door and immediately start dinner for the twins and we just get them sat down to eat and we are going to start our dinner prep. What happens? The power goes out! No way to cook our food in the kitchen! What to do? Mike gets an idea to put a skillet on the gas grill with a lid over the pizza to keep in the heat. He cooked it on low until the cheese was melted on top. The crust was just right.

The next time the pizza came up on one of our menus we cooked it according to directions and didn't like it nearly as well. Now we only cook it on the gas grill.

I tried to do those pizzas a few times and mine turned out the same way.......... like baked cardboard discs........ So I Bypass them now and ask for substitutions.

I had the same problem! I've only tried it once and I just assumed I cooked it too long... even though I followed the directions precisely! I don't have a gas grill so I guess if I get up the nerve to try this entree again, I'll cook it for 15-18 minutes and see what happens.

I don't cook mine directly on the oven rack. I have a pampered chef stoneware pan (like a cookie sheet or jelly roll pan) that I cook mine on. It comes out fine.

I did it directly on the rack the first time and it made a mess so I've been using the stoneware pan ever since.

I don't use the oven. I microwve it till the cheese melt and the crust comes out soft... sort of like a flatbread. I really like it!

A neighbor of mine bought me an air sheet that is used primarily to bake cookies. I cooked the pizza for just 20 minutes and the crust did not come out burnt. It was still difficult to slice, but the texture of the pizza was good.
