I wanted to pass this one along. I'm not a vegetarian, but I have friends who are. I saw something very similar to this on 'Top Chef' last week, and adapted it to make it a little bit lower in fat. I checked the exchanges with the JC dietician. The girls came over for dinner tonight and they all really enjoyed this. Plus, it meant that I could have dinner with them without having to spend an extra twenty minutes on the treadmill tomorrow. YUM!

Serves 2...


Vegetarian Tacos with Corn Tortilla, Avocado, Papaya & Cilantro

4 Corn Tortillas (4 starches) (tastes best if they're warm)
1/2 avocado, mashed (4 fats)
1 tomato, diced (1 vegetable)
1/4 cup red onion, chopped (free)
1/2 papaya, diced, mashed (1 fruit)
1T coriander, cracked (free)
1t cinnamon (free)
Salt and pepper to taste (free)
1/4 bunch cilantro, chopped (reserve chopped stems) (free)
1 lime, juiced (1/2 fruit)

Mix the avocado, tomato, onion, papaya, cilantro, most of the lime and spices together in a bowl. Heat corn tortillas. Spoon 1/4 of the papaya/avocado mixture into each tortilla and roll up. Drizzle lime juice, cilantro and fat free sour cream (if you have a limited free available) over the top.

So, per serving: 2 starches, 2 fats, 1 vegetable, 2 fruits, lots of free seasonings
