Hi all!

Just wanted to start this new topic! I thought I had a replied to something yesterday but either I didn't or it got lost!

I do not consider myself a vegetarian because I eat a limited amount of seafood and also eat eggs. It is something that seems to run in my family. I eat seafood and eggs mainly for a source of protein.

I just started JC this week so I have not been doing JC long enough to get tired of the options. If JC is not going to have items such as veggie burgers they need to at least provide information on more vegetarian meal on your own options. I usually eat at least 1 veggie burger a week so I will soon be craving one!

If we all complain to our conselors either at the centers or Jenny Direct we may see some new vegetatian options. If people only new how unsafe it is to eat meat that has been processed commercially there would be more vegetatians!

My first day on JC I made a great soup that is similar to the Tuscon Soup. Here it is:

1 large sweet onion, diced
1 large eggplant cubed and peeled
1 red pepper, diced
1 16 ounce can of diced tomato's with basil, garlic, and orgegano (I used Hunts)
1 can of water
1 teaspoon of olive oil
Pam cooking spray

Start with onions, saute' for three minutes
Add red pepper and saute' for 3 minutes
Add eggplant and saute' for 5 minutes
Add Tomatoes and water
Cook on medium until veggies are tender (about 30 minutes)
Use the pam cooking spray as needed

*I salted the eggplant for ten minutes and rinsed it off well before cooking it, that takes any bitter taste out of the eggplant.
You can add any other spices you like.

Hi im adrienne yes i have been vegitarian well a part timer cause i still do eat fish and shell fish for protien also cause we have kids so they need it and we have been vegitarian for like 6 months finding it good i dont miss it one bit but i think your so right jenny is hard to work with they had a vegi burger but then it dissaperd hmm strange well you can email me at adrienne1980@gmail.com
