Ideas for vegetarian recipes and snack foods

Middle Eastern Food is always a vegetarian staple, and I miss it, but I did find one thing.....Oasis Classic Cuisine fat free hummos. Yum! And it's only 18 calories a serving. It's great for dipping veggies. You can get it at Whole Foods and I'm sure a bunch of other places as well.
Any other ideas for vegetarians?
